Healthy Sauerkraut Soup

Ingredients:

  • 2 (16ounce) can or package sauerkraut, undrained (fermented cabbage)
  • 1 cup red onion, chopped
  • 4 cloves garlic, minced
  • 3 stalk celery, cubed
  • 1 carrot, julienne cut
  • 1 cup canned kidney beans, drained
  • 4 cup chicken broth
  • salt and pepper
  • 1 teaspoon Hungarian paprika
  • 1 teaspoon cayenne
  • 1 bay leaf
  • 1/4 cup parsley, chopped
  • 2 tablespoon olive oil

Directions:

1 Heat a large thick-bottomed pan on medium heat. Pour in the olive oil, add the onion, garlic, celery, carrot and paprika, cook until the onion is soft, about 10 minutes.

2 Add the sauerkraut with its juice, bay leaf, salt, pepper, and cayenne. Cover and simmer on medium heat for 30 minutes.

3 Add the beans and chicken broth. Cover and simmer on low heat for about an additional 20 – 30 minutes.

Serve with fresh parsley. Keep the rest refrigerated as it will last for a few days.

Oven Fried Vegetables

Ingredients:

  • 10 ounces butternut pumpkin, sliced 1/2″ thick
  • 10 ounces zucchini, sliced 1/2″ thick
  • 10 ounces tomato, halved
  • 1 carrot, sliced
  • 1 tablespoon olive oil
  • salt and pepper
  • fresh sage and thyme (optional)

Directions:

1 Preheat the oven to 350 F

2 Cover a pan with baking paper

3 Arrange the vegetables on the pan, sprinkle with salt, pepper, sage, thyme leaves, and the olive oil.

4 Bake it for 20 minutes.

  • Drink as much water as you can.

  • Don’t eat bread, rice, pasta, and potatoes.
